The Domaine is Set on an ancient site dating back to the arrival of the Etruscans in Languedoc, around 700 BC, the Tuscan-inspired Larzac Castle was rebuilt in the early seventeenth century by G. Grangeon, Intendant of the Princes of Montmorency, governor of Languedoc. The vineyard covers 75 hectares of clay-limestone hillsides bordering the Peyne, a tributary of the right bank of the Hérault. The motto of the domain is registered on one of its walls: "Sine sole nihil" or "Nothing without the sun."

Harvest                    Selection of grapes to the plot. Winemaking. Per plot unit harvest de-stemmed, fermented in temperature-controlled variety by variety. Daily pumping during the time of the alcoholic fermentation. Maceration for 40 days. Malolactic fermentation in tank and casking.

Ageing                      50% of the blend was aged in barrels / 50% in casks for 6 months. Bottling in June after a very light filtration

Tasting notes

Colour is a bright and beautiful dark red. The nose is characterised by aromas of stone fruit in alcohol, cherries, plums, but also of tobacco, caramel and salted butter. On the palate there is cooked fruit, hints of vanilla and caramel. Tannins are velvety and the mouth has a nice sweetness, good length and finish.
